Valentine’s Day Crush

Chandon Rosé
Homemade Strawberry Sorbet:
2 lbs. Strawberry Puree
¼ cup Atomized Glucose
2 tbsp. Invert Sugar
½ cup White Sugar
10 oz. Water

Defrost the fruit puree, and boil the water. Make a dry mix with the white sugar and atomized glucose. When the water reaches 113/122°F, pour in the dry mix. Stir and bring up to 185°F. Chill for 3 hours minimum in the refrigerator. Add the syrup into the fruit puree and the inverted sugar. Blend the mixture well before placing in the ice-cream maker and freeze according to the manufacturer’s instructions. Place 1 tbsp. of sorbet at the bottom of the glass and fill with Chandon Rosé.
