Elettra Wiedemann is one of New York City’s healthiest and hautest. The model, who is the daughter of actress Isabella Rossellini, has appeared in countless magazines and starred in campaigns for brands like Bill Blass and Ferragamo. And aside from her style cred, she also happens to be incredibly smart. Wiedemann earned a master’s degree in biomedicine from the London School of Economics and put her broad knowledge to good use. Earlier this fall, she launched Goodness, a pop-up restaurant concept that made its debut during Fashion Week. This gal proves that it’s possible to be a fabulous foodie and still sport designer duds.
Who are your muses?
I’ve been really lucky working in fashion for so many years, and so many of the people are incredibly inspiring. You have artists, designers, editors and chefs who are all trying to make it. We’re really plugged into so many incredible industries- film, music, even food.
What inspired Goodness?
I went to the London School of Economics for my master’s, and we ate just pretzels and bagels all day- it’s the same scenario backstage during Fashion Week. So I started really thinking about healthy eating. I wanted to create a space where emerging culinary talents could create nourishing dishes.
Are you a cook yourself?
I’m definitely not an expert. I can cook, but I’m not a chef. I tend to stock to a few recipes I love and make them over and over. I leave the fancy stuff like Oysters Fitzpatrick to the pros.
What are you go-to dishes?
I used to be a vegetarian, so I got really good at grilling vegetables, which is much harder than you would think. Mine used to be overcooked, soggy, and gross, but I finally figured it out.
What’s the key to great grilled vegetables?
Balsamic vinegar, olive oil, and timing.
Any other staple meals?
I make a pretty good omelet, and my vegan pesto is the perfect addition to fish and pasta.
