Cornish hen recipe

Cornish hens or Cornish game hens are a hybrid of Cornish and White Rock chickens. They are usually no more than four to six weeks old and no larger than 2 and 1/2 pounds. They generally serve one person and are less bony than squab. Best broiled or roasted, they are terrific stuffed and perfect for a romantic meal or dinner party.
